How healthy is it to eat torta ahogada?

This Sunday, September 7, the municipal seat of Guadalajara celebrates Torta Ahogada Day, a dish that is a symbol of Guadalajara's identity.
In the Guadalajara Metropolitan Area ( AMG ), it is common to find street stalls and restaurants that offer tortas covered in salsa, which are accompanied by tacos dorados, and for dessert, jericalla or rice pudding.
To prepare torta ahogada, you need a crispy, salty birote, fried pork carnitas, refried beans, and tomato sauce, plus chili, depending on your taste. This combination of ingredients raises questions about whether torta ahoga is truly healthy or, on the contrary, harmful.

Scientists from the Jalisco State Center for Research and Assistance in Technology and Design ( CIATEJ ) conducted research to determine the nutritional value of this food.
The results of the study reveal that torta ahogada is a low-fat product. This is due to the meat's high fiber content, which prevents it from absorbing the fat used to fry it during cooking.

“Meat has 28.4 grams of protein, which is a lot compared to a beef steak, which is one of the most beneficial proteins, but it only has 18 grams of protein, or 100 milliliters of milk, which only provides three percent of the protein,” said María Dolores García, a doctor at CIATEJAL.
Thus, the research conducted has served to debunk misconceptions about eating tortas smothered in tomato sauce. Despite this, like any other food, this dish should always be consumed in moderation.
