Raw milk, association with new guidelines appreciated

In reference to the new guidelines of the Ministry of Health on the production of milk cheeses raw for the prevention of STEC infections and HUS (hemolytic uremic syndrome), Alice Project - Association for the fight against SEU "expresses a strong appreciation of the contents and the ways in which the technicians have approached the issue in a 360° manner address the problem, providing guidance to the entire supply chain production, from the stable to the milking parlor, to conservation and transport of the milked milk, to the loading and unloading phases, to the use of drinking water in production and with respect to production process and related sampling plans". The association considers "fundamental and essential points those of ensuring public health and a correct and transparent information to the consumer regarding the risks negligible of raw milk products". Appreciation also for the need for an information label if the manufacturer is unable to guarantee the elimination of the STEC. An invitation, then, to activate in the coming months "an important information campaign aimed at the population." The association recalls that "the problem of milk cheeses raw cannot be taken into consideration only and exclusively with respect to cases of hemolytic uremic syndrome that have hit and are hitting small children, but infections from STEC, which cause hospitalizations and visits to emergency rooms for important gastroenteritis for which it is necessary that the regions take action". Finally, the association thanks the Undersecretary of Health, Marcello Gemmato, "for having the working table was established in a timely manner by responding thus to a need that has now become no longer postponable".
