Many establishments in Bourgogne-Franche-Comté, such as restaurants, bakeries, and butcher shops, have undergone health inspections. In 2024, more than 2,500 establishments were inspected, some of which revealed non-compliances that could result in a warning, formal notice, or closure. But what are the results of these inspections in Franche-Comté?
In 2024, more than 2,500 health inspections were carried out in Bourgogne-Franche-Comté by the departmental directorates for population protection (DDPP) and fraud prevention services. This new organization, operational since January 2024, assesses hygiene conditions, compliance with expiration dates, and product traceability.
2,557 checks in 2024 in Burgundy-Franche-ComtéThese inspections concern all establishments involved in food sector activities. Their frequency is determined by a risk analysis taking into account the type and volume of activities, the results of previous inspections and consumer complaints. In 2024, the majority of inspections concerned catering (1,417) , followed by direct-to-consumer establishments such as bakeries (868) and collective catering structures (272).
These checks were carried out by 10 inspectors from the delegate and around forty inspectors from the departmental directorates of employment, work, solidarity and population protection (DDETSPP) at the regional level.

Health inspections focus on several aspects, including the design and hygiene of premises and equipment, staff hygiene and training. Control of the production chain, including self-inspections and traceability, is also considered. Non-conformities are sometimes noted, the most frequent of which concern the maintenance and cleaning of premises or equipment, insufficient monitoring of the cold chain, defects in the control of risky processes (low-temperature cooking, sous-vide cooking), and non-compliance with use-by dates.
Formal notices for 37 establishments in Franche-ComtéIn Franche-Comté, 37 establishments inspected between May 2024 and May 2025 presented a hygiene level of "needs improvement." These establishments were formally notified and required to implement corrective measures. In the event of non-compliance, stricter sanctions may be applied, including administrative closure in situations requiring urgent correction.

Across Burgundy-Franche-Comté, the DRAAF estimates that 370 establishments in the region were affected by a "needs improvement" assessment at some point in 2024, representing 16% of inspections . "In the majority of cases, non-conformities are corrected," the DRAAF reports. It should be noted that the last data used dates from April 2025, and some assessments may have changed since then.
Health checks: 4 levels of hygiene
- Highly satisfactory if the establishment is compliant or has minor non-compliances.
- Satisfactory if the administration issued a simple warning to the establishment (reminder letter of the regulations with a view to improving practices), but did not impose any sanctions.
- To be improved if the administration has formally ordered the establishment to comply with health regulations within a certain period under penalty of sanction (a new inspection will take place to verify the implementation of corrective measures).
- To be corrected urgently if the establishment could endanger the health of the consumer. The administration has imposed a sanction (for example, the closure of the establishment).
